This is by far my favorite lunch item right now. The local “pub” makes it, but I have decided to make it my own. I will add a photo when I get a chance to take one!
Southwest Chicken Salad
2 cups Romaine Lettuce (0 points)
1/2 cup Black Beans (2 points)
1/2 cup canned corn, drained and rinsed (1 point)
3 tortilla chips, broken up or cut into strips (1.5 points)
1/4 cup BBQ sauce (2points)
1/4 cup diced tomatoes (0 points)
3 oz of cooked (baked, broiled, grilled) chicken, diced or chopped (3 points)
Mix all of the ingredients together in a bowl. This is what I make for myself for a “complete” lunch, but you could make it bigger to share.
