Weekly Menu: Week 1

This week I begin professional development for my first year of teaching (this year as a resident in training.) I am excited to begin my 175 school day journey to becoming a full-time urban school teacher. One thing I am going to work on is my eating habits. Because I will be in a fast food desert (SUCH a good thing) while at school, and since I won’t be able to leave school to get anything to eat at lunch, I need to take my lunch to school everyday. That means I need to plan my lunches ahead of time. I wll try to post them (along with recipes, if needed) so I have a place to keep a record of what I have eaten. Here is week 1!

These are lunch menus, will work on getting dinner up when I have them planned. :)

Sunday – Crock Pot Chicken with black beans (find the recipe here)…I made it with no salt corn, low sodium black beans and 1/3 less fat cream cheese. I also added brown rice to the mixture when I added the cream cheese – should thicken up the sauce (which was really watery) significantly.

Monday – Left over Crock Pot chicken from Sunday

Tuesday – homemade “Starbucks” platter: cheese, flatbread crackers, grapes, red pepper strips, unsweetened applesauce cup

Wednesday – baked french fries, Smart Ones Mini Cheeseburger, no salt added canned corn, can of Diet Coke

Thursday – Left over Crock Pot Chicken, watermelon

Friday – Smart Ones Ziti with Marinara sauce, canned no salt green beans
