Weekly Menu- Week 1 **Update**

**UPDATE** I have actually been true to a few things on my schedule….I may not have eaten exactly (ok, some days nothing) what I had on the list, but I am happy to report I only ate fast food ONE DAY this week- that is a HUGE improvement for me. LIKE MONSTER IMPROVEMENT. H-U-G-E. I took my lunch to work/school EVERY DAY THIS WEEK. Again, H-U-G-E for me. It just goes to show what packing my lunch the night before can do.

This week I begin professional development for my first year of teaching (this year as a resident in training.) I am excited to begin my 175 school day journey to becoming a full-time urban school teacher. One thing I am going to work on is my eating habits. Because I will be in a fast food desert (SUCH a good thing) while at school, and since I won’t be able to leave school to get anything to eat at lunch, I need to take my lunch to school everyday. That means I need to plan my lunches ahead of time. I will try to post them (along with recipes, if needed) so I have a place to keep a record of what I have eaten. Here is week 1!

These are lunch menus, will work on getting dinner up when I have them planned. :)

Sunday – Crock Pot Chicken with black beans (find the recipe here)…I made it with no salt corn, low sodium black beans and 1/3 less fat cream cheese. I also added brown rice to the mixture when I added the cream cheese – should thicken up the sauce (which was really watery) significantly.

Monday – Left over Crock Pot chicken from Sunday I slipped and ate a fatty Mickey D’s dinner. Blech.

Tuesday – homemade “Starbucks” platter: cheese, flatbread crackers, grapes, red pepper strips, unsweetened applesauce cup CHECK

Wednesday – baked french fries, Smart Ones Mini Cheeseburger, no salt added canned corn, can of Diet Coke CHECK (though I really disliked the Mini Cheeseburger. Won’t buy them again. Too much like White Castle (Which I don’t like either… too much onion)

Thursday – Left over Crock Pot Chicken, watermelon CHECK

Friday – Smart Ones Ziti with Marinara sauce, canned no salt green beans (I am having people over for a movie watching party, so this will change to 1 turkey burger on the grill, a light bun, watermelon, baked beans, diet coke. But it still counts as homemade since I am cooking/grilling!! :-) )

Proud of me for sticking to my list!! :-)

    Taking lunch to work makes sense in a myriad of ways, so I hear you!

    Time is an issue for me so I cook for the entire week in one day, not bad at all.

    I’ll be keeping up with the blog, I’m in serious “get fit” mode :D
