I tried a new recipe today – it was actually really good:

Mexican Bean and Tortilla Pie

Course: main meals

Store leftovers for up to 3 days in the refrigerator.

Ingredients

  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 3/4 cup salsa
  • 1 cup canned tomato sauce
  • 1/4 cup cilantro, fresh, chopped
  • 1/2 cup low-fat shredded cheddar cheese
  • 4 serving Low fat/high fiber tortillas
  • 14 oz canned black beans, drained, rinsed and mashed

Instructions


Preheat oven to 400°F. Combine tomato sauce, salsa, cilantro, chili powder and cumin in a small bowl.
Heat a large nonstick skillet over medium-high heat. Add as many tortillas as will fit in one layer. Cook about 1 minute, turning once, until lightly toasted. Remove and set aside. Repeat with remaining tortillas.
Spoon 1/4 cup of tomato sauce mixture over bottom of a 10-inch pie plate or other round, shallow baking dish. Top with a tortilla and 1/4 cup more sauce. Spread with 1/2 cup of mashed beans; top with 2 tablespoons of green chilies and 1 tablespoon of shredded cheese. Repeat with remaining ingredients to form 3 more layers and then top with remaining tortilla, sauce and cheese.
Cover dish with foil and bake for 30 minutes. Uncover and bake until heated through and sauce bubbles around edges, about 5 minutes more. Cut into 6 wedges and serve. Yields 1 wedge per serving.

AJ’s notes: I changed this from the WW website – I only had a reg sized can of black beans (should have used 2 regular sized cans) and I took out the chopped canned green chilies – I don’t like them. I also used these GREAT tortillas (of course- no picture – they are the olive oil whole grain rye wraps) that are only one point each (90 cal; 3gr fat; 13 grams protein, yep 13!!)- so that lowered the pt count to 3 instead of 4. The way the recipe appears above is how I made it.


New items to try…

prods_steamer_image1.jpgI came across the new Cafe Steamer Bowls from Healthy Choice last night in the grocery store. I bought two of them to try and had the Roasted Chicken Marsala. One of the things I don’t usually like about frozen meals is that they have so much sauce on them, and I am a picky eater that likes things “plain”. I actually really liked the bowl, because the sauce is seperate from the meal and you pour it on after the bowl steams/cooks in the microwave. Check them out if you have a chance. (If I remember correctly, this bowl was 6 pts.)

savoryvegbarley1.jpgAnother of the new favorites are the new WW approved Progresso Light soups that are ZERO POINTS PER SERVING!!! I really like the  Savory Vegetable Barley Soup. mmmm!

And though I mentioned how much I loved them before, I am giving another shout out to the Blueberries and Cream Light Frappacchino from Starbucks. I love this drink, and love even more that Starbucks has a nutritional value calculator 2698starbucksblue1.jpgon its website. Tall is  points and Grande is  points (though tall is just enough for me)

mmmm turkey burgers

AJ’s Tasty Turkey Burgers 

Makes 4 servings

1lb lean ground turkey

few (or many) dashes of Worcestershire sauce

1/4 cup crumbled blue cheese

few shakes of dry onion (I bet it would be good with dry onion soup mix too)

salt to taste

pepper to taste

mix all ingredients together with your hands and make into 4 patties. Grill 5 minutes until done (on a George Forman. Not sure how long to cook on traditional grill). Garnish with tomato, lettuce and onion (of you wish)

I counted this at 4 pts per burger (turkey was 2, blue cheese was 2) and 2 more points for a bun for a total of 6 pts. Still great for a “burger”!!
